Colcannon (Irish kale and mashed potatoes)

My favorite cooked kale thing is Irish Colcannon made from mashed potatoes and kale

for 2 portions I take a

  • 1/2 lb of kale leaves
  • 1 cup of stock
  • 1 med potato
  • 1 teaspoon soy spread (or butter)
  • salt
  • 1 teaspoon of finely chopped chives or green onion
  • 1 tablespoon of diced smoked tofu (optional)

Cut the potato into small cubes, add to salted water, bring to a boil then turn down to a simmer until the cubes are almost mushy. The smaller the cubes the quicker the cooking.

Slowly boil the kale in the cup of stock and the smoked tofu until totally cooked and liquid almost gone

Drain the potatoes, fluff them with a fork using  soyspread or when not wanting the calories of fat using a potato ricer.

Gentle fold the kale into the potatoes and serve in a nice bowl with finely chopped green onions or chives floating in a small pool of veg fat.
