Twice cooked (re-fried) Beans

Vegan re-fried beans are very easy. I like using black soybeans but even our lasy housewife beans are nice dryed.


  • 1 1/2 cups of beans
  • 1/8 cup of grape-seed oil or other neutral oil
  • 1/2 cup of chopped onion
  • 1 teaspoon ground cumin or more to taste
  • bay leaf
  • 1 tablespoon of chopped garlic
  • salt & pepper
  • 1/8 teaspoon cayenne, or more to taste

Simmer a cup and half of beans until tender, using salt, the bay leaf and the garlic. These may be done ahead of time and refrigerated

Heat oil in a large skillet over med heart, When hot , add the onion, stirring until golden

Add the cumin, stir. then add the beans, mashing them up, Taste and adjust seasoning.

Try flavoring the beans with

  • minced ginger
  • garlic
  • cilantro
  • chopped black olives
  • grated cheese
  • tomatoes
  • onions
  • jalapeno or other chilies

We often use re-fried beans as the major stuffing in yellow corn tacos and in wraps.
