Sauted Pumpkin

Our favorite recipe for this pumpkin is very simple:

  • 3 cups of peeled and cubed (1″ cubes) pumpkin or other hard squash
  • 1/2 cup of minced onion
  • 1 tablespoon of minced garlic
  • 1/2 cup of red wine
  • 1 cup of tomato sauce (canned is fine)
  • 1/2 cup of favorite veg stock
  • chopped fresh hot pepper, to taste (cayenne or other hot sauce from the bottle will also work)
  • salt and pepper
  • 3 cups of cooked rice

Saute 3 cups of peeled and cubed pumpkin stirring until pumpkin is starting to caramelize (brown on outside)

add the 1/2 cup of minced onion and continue stirring until onion is translucent.

add 1 tablespoon minced garlic and de-glaze using the 1/2 cup red wine

then add a cup a cup of tomato sauce.

Pour in enough of your favorite veg stock to barely cover and add hot pepper, to taste then let simmer for 10 to 15 minutes.

 salt/pepper to taste 

Serve on a bed of hot rice or other grain.

Make double the recipe as this tastes even better the next day!

This is a go dish for potlucks. Try serving it in a steamed pumpkin with pumkin seeds sprinkled on top.
