Purple Barley and Potato Salad

Barley and Potato Salad

1 cup of boiled barley
1 cup of boiled potatoes
cool then mix with
1/2 cup of walnuts
1 teaspoon of olive oil
1 teaspoon of balsamic vinegar
salt & pepper plus

Chop some green herbs on top and serve slightly warm or cold.  Cheese such as chevre and feta also make delicious non-vegan toppings.
