Tomatoes and Turmeric salad

Turmeric has many health benefits including anti-inflammatory properties. The problem for me was the taste when used in large amounts.

Then I discovered Ethiopian style salads. With them I can load up on Turmeric and still have great tasting food to eat and serve.

A salad for 2 humans at RR7 starts with picking fresh ingredients.

Today from the farm we have

  • 2 cups of cherry tomatoes cut into half’s or chopped
  • 1/8 cup of minced red onions
  • 1 teaspoon minced jalapeno chili
  • salt

from the store

  • 1/2 fresh squeezed lemon
  • 1/2 teaspoon of ground turmeric
  • freshly ground black pepper

Mix everything but the tomatoes into a bowl and stir. Add the tomatoes and toss gentle until coated. Chili for 1/2 hour, taste and adjust seasoning if necessary. Enjoy
