Chard with oranges


serves 2


1/2 lb chard

baseball sized orange

golf ball sized onion, shallot is best

1 tablespoon of olive oil

1 tablespoon of sherry vinegar

tablespoon of sugar

salt & pepper


trim the chard stems and chop them very fine

in a second pile cut the leaves into strips

Chop both the onion and orange, including peel, into small pieces


Put olive  oil into a large skillet with lid on high heat

Add the onion plus 2 tablespoons of sugar, cook for a couple minutes

Add the orange and lower the heat. cook for about 10 min. until everything is caramelized.

Stir in the vinegar


Turn the heat back up to medium, add the stems, cook for a couple minutes

Add the leaves and turn off the heat.

In about three minutes, stir the pan, recover and wait three more minutes

Sprinkle with salt and black pepper


Serve hot or cold
